I found a post on stardot and worked out the following which I'll put here for anyone else who may find the thread with the same problem:

*CONFIGURE FILESYSTEM ADFS
*CONFIGURE DRIVE 4
*DRIVE 4
*OPT 4 2
Both UniBoot from RISC OS Ltd's 3.11 FTP server, and UniBoot2 work out of the box. Though its changed the theme in RiscOS to the 3.70 version
However if I try to merge the newly downloaded ROOL System folder (using its included sysmerge) then both UniBoot versions crash at the splash screen with an in-escapable application error.
On the plus side the imaging list is now full of text and I've made images of many disks though only tested one works so far - Conqueror. This is a disk I bought which was untested and I never could get it to boot via shift break, but ADFFS did

You should report the crash on ROOL so the devs can resolve it.

Now that I've got all these disk images, the Acorn no longer wants to read the 720kb floppy I've been using for all the uniboot etc. copies which I was about to use to transfer the images off the computer with.
If I try to format it (and other test disks) on the Acorn it says bad drive, has this disk been formatted or gets to 100% of the format process and then says Format Failed. Disk still works fine (read and write) under Windows 10.
I am having so much luck these days

If you have an image file mounted, make sure you Eject it and also try without ADFFS loaded to make sure it's not affecting the format.

Even rebooting the machine etc. didn't manage to get it working.
In the end though I discovered Linux allows for mounting ADFS which meant I could copy and paste everything off the drive from the Acorn in one go through a live environment which was great to discover since I wasn't looking forward to hundreds more 720k floppy transfers.
I updated my non-networked transfer thread to mention Linux since it may be useful to others.
