After finishing a race (time out in my case) I get the following error: "Unable to open data file". Tested on real hardware - A3020 (4MB, RISC OS 3.11, ZIDEFS). Tested with ADFFS (v2.82).

I couldn't reproduce this issue - I tested running from both floppy and an HD install.
I've updated the OP with the HD install instructions, just in case that's how your running it.

I followed the HD install instructions, but double-clicking on !FTT with ADFFS loaded nothing happens.

Ignore that, got it working now. I misread "Add the following to the top of" as "replace with". Presumably you don't need to keep either JFD image once you have copied the disc 1 image to the !FTT dir (and copied the 2nd disk contents into !FTT)?

The install notes will include a step if the JFD needs to be retained - along the lines of "Copy the disc 1 image as !game.F1234501".
Disc 1 is generally only retained for protection checks. There are some single disc games which don't save their highscores, where it's only the floppy image being copied to HD and a few early multi-disc games that only run from floppy, where again it's only the floppy images and possibly Sprites/Sprites22 being copied.
